- Curry Chicken Salad – Chop up pre-cooked chicken and mix with mayonnaise, curry powder, grapes (or raisins or dried cranberries) and slivered almonds (or sunflower seeds or whatever but/seed you have)
- Meatball and Zucchini Kebobs – mix ground chicken (or turkey or lamb or beef) with some seasonings (I had merguez). Roll into meatballs and alternate on skewers with thick slices of zucchini. Mine fell off while cooking (on our new cast iron griddle) so maybe I’ll try smaller next time.
- Easy spaghetti – Brown ground beef and add a jar of spaghetti sauce (and a Tablespoon of a secret ingredient). Simmer. Spoon over spaghetti and top with good Parmesan. Thanks Lisa and Boo.
- Always room for take out for a local recommendation teamed with a picnic blanket at the nearby river (here was Wild Rose Thai on the Deschutes River at Drake Park in Bend).
